目的 了解河南省部分地区流通领域芝麻油脂肪酸组成情况。方法 按照GB 5009.168-2016《食品安全国家标准 食品中脂肪酸的测定》, 采用气相色谱法对芝麻油中的脂肪酸组成进行分析, 按照GB/T 8233-2008《芝麻油》中脂肪酸组成进行判定, 分析2017~2018年河南省部分地区流通领域预包装芝麻油脂肪酸组成情况。结果 2017~2018年河南省内部分地区流通领域内抽取预包装芝麻油样品420批次, 总问题样品率约为26%, 2017年芝麻油问题样品率为25%, 2018年的为26%, 2年间的问题样品率无显著性差异(χ2=0.021, P≥0.05)。结论 根据芝麻油、大豆油及菜籽油中脂肪酸组成推测, 河南省部分地区流通领域内的芝麻油可能掺入大豆油或菜籽油, 有一定的市场风险隐患。 |

Objective To understand the situations of sesame oil fatty acid composition in circulation of parts of Henan province. Methods According to the national standard GB 5009.168-2016 National food safety standard-Determination of fatty acids in food, sesame oil fatty acid composition was analyzed by gas chromatography. According to the national standard GB/T 8233-2008 sesameseed oil, the result of fatty acid composition was determined. Pre-packaged sesame oil fatty acid composition in circulation of parts of Henan province from 2017 to 2018 was analyzed. Results From 2017 to 2018, a total of 420 batches of pre-packaged sesame oil in circulation of parts of Henan were sampled, the total unqualified rate was 26%, and the problem sample rates were 25% and 26% in 2017 and 2018, respectively. There was no statistical difference between two years (χ2=0.021, P≥0.05). Conclusion According to the fatty acid composition of sesame oil, soybean oil and rapeseed oil, sesame oil might have been adulterated with soybean oil or rapeseed oil in circulation of parts of Henan province, so there are some hidden risks in markets. |
