      目的 建立顶空技术串联气相色谱法快速检测酱油中丙酸盐的含量。方法 准确称取一定量酱油至顶空品瓶内, 加入磷酸使丙酸盐酸化为丙酸, 采用ZB-WAXplus毛细管柱(30 m×0.25 mm, 0.25 μm)分离, 火焰离子检测器检测器检测, 外标法定量。结果 丙酸盐在10~200 μg/mL浓度范围内线性关系良好, 相关系数为0.9992, 检出限为0.02 g/kg, 三水平加标回收率为97%~107.5%, 相对标准偏差为1.95%~2.63%。结论 该方法前处理简单, 检测结果可靠准确, 适用于酱油中丙酸盐的含量的测定。
英文摘要:
      Objective To establish a method for rapid determination of propionate in soy sauce by headspace tandem gas chromatography. Methods A certain amount of soy sauce were accurately weighed into the headspace bottle and propionic acid was converted into propionic acid by adding phosphoric acid. The samples were separated with a ZB-WAXplus capillary column (30 m×0.25 mm, 0.25 μm), detected by flame ion detector detector and quantitative analyzed by external standard method. Results Propionate had a good linear relationship in the range of 10?200 μg/mL, and the correlation coefficients was 0.9992. The limit of detection was 0.02 g/kg. The recoveries at 3 spiked levels were 97%?107.5%, with the relative standard deviations of 1.95%?2.63%. Conclusion The method has simple pretreatment and reliable and accurate detection results, and is suitable for determination of propionate content in soy sauce.
