      目的 鉴定1批肉制品样品中不能被2,3,5-三苯基氯化四氮唑(2,3,5-triphenyltetrazolium chloride, TTC)染色菌落的菌落。方法 依照GB 4789.2-2016《食品安全国家标准 食品微生物检验 菌落总数测定》和GB 29921-2013《食品安全国家标准 食品中致病菌限量》对样品前处理后进行分离纯化, 采用VITEK 2以及基质辅助激光解析电离飞行时间质谱仪进行检测鉴定。结果 经VITEK 2和基质辅助激光解析电离飞行时间质谱仪鉴定, 肉制品样品中不能够被0.001%TTC染色的菌落分别为鲁氏不动杆菌和奇异变形杆菌。结论 在出现TTC无法染色的情况下, 应该采用适当的菌种鉴定方法对样品的颗粒和菌落进行详细区分, 进而防止漏检和误检。

      Objective To identify the bacteria that could not be detected by 2,3,5-triphenyltetrazolium chloride (TTC) in the 1 batch of meat samples. Methods According to GB 4789.2-2016 National Food Safety Standard-Food Microbial Testing Total Colony-Detection of Aerobic Bacterial Count and GB 29921-2013 National Food Safety Standard-Limit Pathogenic Bacteria in Food, the samples were separated and purified after pre-treatment, and then detected and identified by VITEK 2 and matrix-assisted laser desorption ionization time-of-flight mass spectrometer. Results Identified by VITEK 2 and matrix-assisted laser desorption ionization time-of-flight mass spectrometry, the colonies that could not be stained by 0.001% TTC in meat samples were Acinetobacter rutarum and Proteus mirabilis. Conclusion In the case of the particles and colonies of the sample can not be stained by TTC, the appropriate method of strain identification should be used to distinguish in detail, so as to prevent missed detection and false detection.
