      目的 进一步预防重大活动保障中亚硝酸盐食物中毒的发生。方法 采用管式快速检测试剂(化学比色法)及亚硝酸盐检测仪(分光光度法), 根据GB 5009.33-2010《食品中亚硝酸盐和硝酸盐的测定》、GB 5009.33-2016《食品安全国家标准食品中亚硝酸盐与硝酸盐的测定》对食品及食品原料中的亚硝酸盐进行测定。对2016~2018年张家口市各类重大活动保障中食品及食品原料亚硝酸盐残留量快速检测测定结果现状进行分析。结果 有针对性地在餐饮接待单位自身开展食品安全快速检测技术效果显著(?2=25.19, P<0.005)。针对不同类别食品及食品原料存在亚硝酸盐残留量超标现象, 也有统计学意义(X2=35.08, P<0.005)。结论 此次2016~2018年张家口市各类重大活动保障中食品及食品原料亚硝酸盐残留量状况现状分析和调查研究, 收到良好效果, 为未来张家口市各类重大活动保障创建良好的餐饮服务环境和安全优质的保障提供了有效途径。

      Objective To further prevent the occurrence of nitrite food poisoning in major activities. Methods According to GB 5009.33-2010 Determination of nitrite and nitrite in food and GB 5009.33-2016 Determination of nitrite and nitrite in food of national food safety standard, nitrite in food and food raw materials were determined by tube rapid detection reagent (chemical colorimetry) and nitrite detector (spectrophotometry). The status quo of rapid detection and determination of nitrite residues in food and food raw materials during various major activities in Zhangjiakou city from 2016 to 2018 was analyzed. Results Targeted development of food safety rapid detection technology in catering reception units had achieved remarkable results (?2=25.19, P<0.005). According to the phenomenon of excessive residue of nitrite in different food categories and food raw materials, it was also statistically significant (?2=35.08, P<0.005). Conclusion This analysis and investigation on the status quo of residual nitrite in food and food raw materials during various major events in Zhangjiakou city from 2016 to 2018 has achieved good results, providing an effective way to create a good catering service environment and guarantee safety and quality for various major events in Zhangjiakou city in the future.
