      目的 揭示凡纳滨对虾(4±1) ℃条件下贮藏过程中菌群结构的变化规律, 为其贮运保鲜提供参考。方法 采用高通量测序技术对不同冷藏期凡纳滨对虾中的细菌种类及其丰度进行分析。结果 凡纳滨对虾初始菌群以鞘脂杆菌属(Sphingobacterium)、金黄杆菌属(Chryseobacterium)和寡养单胞菌属(Stenotrophomonas)为主; 冷藏过程中, Sphingobacterium、Chryseobacterium、Stenotrophomonas比例迅速减少, 系统进化关系上比较接近的交替假单胞菌属(Pseudoalteromonas)、希瓦氏菌属(Shewanella)和别弧菌属(Aliivibrio)成为优势菌, 其中Aliivibrio的比例相对稳定, Shewanella比例呈先增加后减少的趋势, Pseudoalteromonas比例不断增加, 可能在凡纳滨对虾腐败过程中起重要作用。结论 高通量测序可以更加全面反映凡纳滨对虾中菌群的组成及其丰度信息, Pseudoalteromonas是凡纳滨对虾冷藏过程的优势腐败菌。
英文摘要:
      Objective To reveal the changes in microbiota of Litopenaeus vannamei during storage at (4±1) ℃, and provide references for the efficient storage, transportation and freshness-keeping of prawns. Methods High throughput sequencing technology based on IonS5TMXL was applied to investigate the bacteria composition. Results Based on the data obtained by high throughput sequencing technology, Phingobacterium, Chryseobacterium and Stenotrophomonas were the dominant bacteria in the initial microbiota of Litopenaeus vannamei. However, the proportions of these 3 genera decreased drastically, mostly because of their poor tolerance to low temperature. Pseudoalteromonas, Shewanella and Aliivibrio which were close in the phylogenetic relationship were dominant during storage. The proportion of Aliivibrio was relatively stable, the proportion of Shewanella increased during the first two days and then decreased. The proportion of Pseudoalteromonas increased all the time. Pseudoalteromonas might play an important role in the spoilage of Litopenaeus vannamei. Conclusion High throughput sequencing technology has great advantages and application prospect in seafood microbiology research. This study showed that Pseudoalteromonas was dominant in the spoilage of Litopenaeus vannamei during ice storage.
