      目前消费者对葡萄酒品质的要求越来越高, 快速发展的国产酒与进口酒的市场竞争日益激烈, 在此背景下,国产酒的质量安全对我国葡萄酒产业诚信体系和品牌形象的建立尤为重要。本文结合我国现行法规标准对葡萄原料及葡萄酒加工中影响质量安全的主要因素进行分析, 包括: 食品安全有关的基本质量要求、农药残留、重金属及污染物质、食品添加剂、致病性微生物和生物毒素等, 并根据葡萄酒酿造过程中的“关键质量控制点”阐述了相应的预防和控制措施。从标准和技术两方面为我国葡萄酒质量安全的改善提出了参考建议, 以期为加强我国葡萄酒质量安全管理和体系健全, 促进葡萄酒行业健康快速发展提供理论依据。
英文摘要:
      With the improvement of consumer demand for wine quality and increasingly fierce competition between domestic and imported wine market, the quality and safety of domestic wine is particularly important as the basis for ensuring the integrity system and brand image of China's wine industry. According to the current laws and regulations in China, this paper analyzed the main factors affecting the quality safety of grape raw materials and wine processing, including basic quality requirements related to food safety, pesticide residues, heavy metals and pollutants, food additives, pathogenic microorganisms and biotoxins, etc. On the other hand, according to the "key quality control points" in the wine brewing process, this paper also expounded the corresponding prevention and control measures. This paper put forward some reference suggestions for improving quality and safety of Chinese wine from standards and technology, in order to strengthen our wine quality and safety management system and promote the healthy and rapid development of the wine industry.
