      分子印迹技术是源于二十世纪中期的一种新的方法。由于其结构可预测性、广泛适用性、特异识别性三大特点,使其技术发展极为迅速,被广泛运用于生物工程、临床医学、天然药物分离、环境科学及食品工业等多个领域。近年来分子印迹技术由于其高选择性、简便快速性、高稳定性以及低成本和环保被大量的应用到了食品中化学污染物的检测中。本文将从分子印迹技术的概念、基本原理、制备方法以及在食品化学污染物检测中的应用及发展趋势进行总结,为将分子印迹技术更好的应用于食品中化学污染物的分析检测领域提供了参考。

      Molecular imprinting is a new method that originated in the mid-20th century. Due to its structural predictability, wide applicability and specific recognition, its technology has developed rapidly and is widely used in many fields such as bioengineering, clinical medicine, natural drug separation, environmental science and food industry. In recent years, molecular imprinting technology has been widely applied to the detection of chemical contaminants in foods due to its high selectivity, simplicity, rapidity, high stability, low cost and environmental protection. This article will summarize the concept, basic principles, preparation methods of molecular imprinting technology and its application and development trend in food chemical contaminant detection. It provides a reference for the better application of molecular imprinting technology in the field of analytical analysis of chemical contaminants in food.
