随着全球化的发展,食品供应链范围更加宽泛,而食品掺假等欺诈问题日益严重,影响着全球的经济市场、食品质量与安全监管和消费者的身体健康,食品掺假现象已得到社会各界的广泛关注。食品检测技术错综复杂,随着基因组序列测定的完成,人们把检测的研究方向转向了蛋白质组学,这种检测手段的先进性、适用性在食品质量和安全等方面取得广泛应用。质谱作为蛋白质组学方法的常用技术,可利用质谱的高通量分析优势对蛋白质和肽段进行鉴定、检测和定量研究,即可为常规应用开发简单的、快速的方法来分析复杂的或深加工的食物,又可对具有高分离度的微量分析物进行定量检测。该文主要介绍了蛋白质组学方法在食品认证中的应用,阐述了高分辨质谱技术在乳制品、肉类、海产品以及葡萄酒的食品欺诈检测鉴别中的运用,为该类食品安全问题的处理提供有效的参考。 |

With the development of globalization, the scope of food supply chain becomes broader, and the adulteration of food is becoming more and more serious, which not only affects the global economic market, but also the supervision of food quality and safety and the health of consumers. Consequently, food adulteration has been widely concerned. Food inspection technology is complicated. With the completion of the draft sequence of the human genome, there is a great deal of interest in the use of proteomics. Proteomics technology has been used in the test of food quality and safety because of its advancement and applicability. As a common technique of proteomics, mass spectrometry(MS) can identify, detect and quantify proteins and peptides through the high-throughput analysis. MS can develop simple and fast methods for routine applications to analyze complex or deep-processed food,and also can be used in the quantitative detection of highly resolved micro-analytes. This literature review mainly introduces the application of proteomics in food certification, and expounds the application of high resolution mass spectrometry in food adulteration field such as dairy, meat, seafood and wine, which provides an effective reference for dealing with such food safety problems. |
