      氨基酸作为生物体中的重要组成成分具有特殊的生理功能, 与人体的健康密切相关。为了更准确地分析食物中营养物质含量并探究氨基酸生理功能的分子机制, 就需要对氨基酸及其代谢物进行检测分析。但常规的氨基酸检测技术已经无法满足研究需要。近年来基于质谱技术的氨基酸检测新方法可以实现多种氨基酸或相关代谢物的同时定性和定量分析。为了更好的对氨基酸检测技术进行研究, 本文就质谱技术在氨基酸及其代谢物检测中的应用进行了综述, 以期为氨基酸的功能性研究提供技术保障。
英文摘要:
      As an important component in organisms, amino acids have special physiological functions and are closely related to human health. In order to more accurately analyze the nutrient content of food and reveal the molecular mechanism of amino acid physiological functions, it is necessary to detect and analyze amino acids and their metabolites. However, conventional amino acid detection techniques are no longer sufficient for research needs. In recent years, new amino acid detection methods based on mass spectrometry can achieve simultaneous qualitative and quantitative analysis of a variety of amino acids or related metabolites. In order to profoundly study the amino acid detection technology, this paper reviewed the application of mass spectrometry in the detection of amino acids and their metabolites, so as to provide technical guarantee for the functional study of amino acids.
