      肉与肉制品是人们生活中不可缺少的食品之一, 随着生活水平的不断提高, 人们对肉制品的种类、品质和安全性也有了更高的要求, 这也给国内外学者们在肉制品加工技术研究方面带来了更多的挑战。本文综述了国内外肉制品加工的现状及现有加工技术中存在的问题, 并对肉制品加工新技术进行了介绍, 旨在为促进肉制品加工产业的发展提供参考。
英文摘要:
      Meat and meat products are one of the indispensable foods in people's lives. With the continuous improvement of living standards, people have higher requirements on the type, quality and safety of meat products, which brings more challenges to domestic and foreign scholars in the research of meat processing technology. This paper reviewed the current status of meat processing at home and abroad and the existing problems in the processing technology, and introduced the new processing technology of meat products, in order to provide reference for promoting the development of meat processing industry.
