      虾青素是一种含氧类非维生素A源的类胡萝卜素, 而β-胡萝卜素则是一种有效的维生素A源的类胡萝卜素。许多研究结果都表明这2种类胡萝卜素具有抗氧化、抗衰老、预防癌症、增强免疫力、清除自由基等生物活性功能, 对人类的营养和健康发挥积极作用。目前, 虾青素和β-胡萝卜素在保健品、化妆品、食品添加剂以及医学领域都有广泛应用, 其安全性与具体的作用机制也倍受关注。本文介绍了虾青素和β-胡萝卜素的结构功能和主要的研究方向, 通过对一些毒理学研究、临床实验的数据结果进行分析, 综述了这2种类胡萝卜素的毒理学研究概况, 对其安全性做出了总结, 以期更加深入地了解虾青素和β-胡萝卜素的毒性作用, 为类胡萝卜素的应用提供参考。
英文摘要:
      Astaxanthin is an oxygenated non-vitamin A source of carotenoids, while β-carotene is an effective vitamin A source of carotenoids. Many studies have shown that these 2 kinds of carotenoids have biological activities such as anti-oxidation, anti-aging, cancer prevention, immunity enhancement, and free radical scavenging, and play a positive role in human nutrition and health. Currently, it is widely used in health care products, cosmetics, food additives and medicine, and its safety and specific mechanism of action have also received much attention. This paper reviewed the toxicological research progress of astaxanthin and β-carotene and gave a summary of the safety through analyzing the data of some toxicological studies and clinical experiments, in order to further understand the toxic effects of astaxanthin and β-carotene and provide references for the application of carotenoids.
