      目的 通过GB/T 5009.229-2016《食品安全国家标准 食品中酸价的测定》中的3种测定酸价的方法中不确定度的评定结果, 为实际应用中选择合适的方法来对油脂的酸价进行测定方法提供参考。方法 通过对3种测定油脂酸价的方法进行不确定度来源分析, 建立数学模型方法, 进行不确定度评定, 计算出各种方法不同的来源对不确定度影响的大小。结果 冷溶剂自动电位滴定法的合成标准不确定度最小, 其次是热乙醇指示剂滴定法, 冷溶剂指示剂滴定法的不确定度最大。结论 冷溶剂自动电位滴定法所测量得到的结果最接近真实值, 更有使用价值。

      Objective Through the evaluation results of uncertainty in three methods for determining acid valence in GB/T 5009.229-2016 National food safety standard-Determination of acid value, to provides a reference for selecting an appropriate method for the determination of acid price of oil in practical application. Methods By analyzing the sources of uncertainty of three methods for the determination of lipid acid value, a mathematical model method was established to evaluate the uncertainty, and the influence of different sources of various methods on the uncertainty was calculated. Results The synthetic standard uncertainty of the cold solvent automatic potentiometric titration was the smallest, followed by the thermo ethanol indicator titration, and the uncertainty of the cold solvent indicator titration was the largest. Conclusion The results obtained by the cold solvent automatic potentiometric titration method are the closest to the real value and more valuable.
