目的 评估本研究所用时间温度指示器(time-temperature indicators, TTI)在奇异果品质监测中的应用情况。方法 分别研究了4种贮藏温度下该TTI的颜色变化和奇异果品质变化情况。通过阿伦尼乌斯方程计算TTI颜色反应和奇异果品质变化的活化能Ea值, 将TTI颜色变化活化能值与奇异果品质变化的活化能值进行比较, 评估使用TTI表征奇异果品质的可行性。结果 TTI颜色和奇异果品质受贮藏温度及时间的影响。贮藏温度越高, TTI颜色和奇异果品质变化速度越快, TTI的RGB值减小速度越快。结论 此TTI能够用于奇异果品质的表征, 说明其在食品品质表征方面具有一定的应用潜力。 |

Objective To evaluate the application of time temperature indicators (TTI) in the monitoring of kiwi quality. Methods The color change of the TTI and kiwifruit quality were studied under 4 storage temperatures. The activation energy Ea value of TTI color reaction and kiwi fruit quality change were calculated by Arrhenius equation, and the activation energy value of TTI color change was compared with the activation energy value of kiwi fruit quality change. The feasibility of using TTI to characterize kiwifruit quality was evaluated. Results The results showed that TTI color and kiwi fruit quality were affected by storage temperature and time. The higher the storage temperature, the faster the TTI color and the kiwifruit quality changed, the faster the RGB value of TTI decreased. Conclusion This TTI can be used for characterizing kiwifruit quality. The characterization of fruit quality indicates that it has certain potential application in food quality characterization. |
