通过分析燕窝加工过程中存在的危害, 确定关键控制点并实施控制, 从而保障消费者的安全, 也为燕窝加工企业、第三方认证机构或官方主管部门对燕窝加工过程实施管理提供借鉴。应用关键控制点判断树方法确定关键控制点, 并通过科学研究、试验、参考其他文献资料等方法确定关键限值, 从而制定HACCP计划。燕窝加工过程关键控制点为清洗、干燥、热处理(适用时), 并在此基础上, 企业可以结合实际以及所在国家标准增加关键控制点。通过对HACCP计划的有效实施, 能够使燕窝加工中存在的显著危害得到有效的控制, 从而满足消费者、官方主管当局对燕窝安全卫生的要求。 |

The hazards of edible bird’s nest in the process were analyzed and the critical control points were determined and implemented, in order to ensure the safety of consumers and provide references for the edible bird’s nest processing enterprises, the third party certification body or competent authority. Critical control points were determined by critical control point decision tree, critical limits were confirmed by scientific research, test and other documents , and then a HACCP plan was developed. Critical control points of processing edible bird’s nest are cleaning, drying and heat treatment (when applicable), and on this basis, enterprises can add critical control points combining with the actual requirements and the national standard. The significant hazards existing in the processing of the edible bird’s nest can be effectively controlled, so as to meet the requirements of safety and sanitation of the bird's nest from consumers and competent authority by the effective implementation of the HACCP plan. |
