      新疆具有得天独厚的气候条件和水土资源, 是中国乃至世界上最重要的番茄、杏子等农产品的生产基地, 由其加工制成的浓缩番茄酱、杏酱等果蔬罐头已成为我区重点发展的主导产业, 也是新疆出口产品的标志。大力发展特色果蔬罐头产业、发挥农产品资源优势是推动新疆地区跨域式发展的重要动力。近年来, 凭借充足的原料、优越的地域优势和较低的生产成本, 新疆罐头产品的出口量逐年增长。随着产量的增长, 这类产品的酸败、胀罐及色泽气味改变等问题也日益突出。本文通过对新疆番茄酱、杏酱等果蔬罐头的微生物污染原因及其危害进行分析, 为解决出口果蔬罐头企业后顾之忧、降低企业经济损失、提高经济效益、促进新疆果蔬产业的健康发展提供科学依据。
英文摘要:
      Xinjiang has unique climatic conditions and environmental resources that is the most important production base of tomato, apricot and other agricultural products in China and even the world. The concentrated tomato sauce, apricot jam and other canned fruits and vegetables have become the leading industry and the symbol of export products of Xinjiang. Developing the canned vegetable and fruit industry and giving full chance to the agricultural products to play local resource advantages are essential to promote the cross-regional development of Xinjiang. In recent years, with advantages of sufficient raw materials, superior geographical advantages and low production costs, the export of canned products in Xinjiang has increased gradually. However, with the increase of jam production, quality problems such as rancidity, swell, color, luster changes and odor changes have become increasingly serious. Accordingly, the aim of this review was to analyze the reasons and harm of these quality problems and offer some theoretical foundations for solving the problems of jam export enterprises to reduce the economic loss and improve economic benefits, thereby promoting the healthy development of the industry.
