目的 建立微生物法测定食品中肌醇含量的分析方法。方法 在含有除肌醇以外的所有营养成分的培养基中, 通过实验过程细节改良使葡萄汁酵母菌(ATCC 9080)的生长程度与肌醇浓度呈正相关, 且在一定浓度范围内具有线性关系, 采用标准曲线法根据透光率(或吸光度)测定食品中肌醇的含量。结果 通过本文的微生物法测定天然食品和强化食品中肌醇含量的线性浓度范围为1~10 μg/mL, 方法的精密度、重复性和回收率良好, 实际样品检测结果均远小于国家食品安全方法学标准。结论 微生物法具有快速、简便、检出限低、灵敏度高等优点, 是测定食品中肌醇含量的有效可靠方法。 |

Objective To develop a method for determination of inositol in food by microbiological method. Methods In the culture medium (containing all nutritional ingredient expect inositol), the growth of Saccharomyces uvarum (ATCC 9080) and the concentration of inositol were positively correlated with each other, and showed a linear relationship within a certain concentration range, which was reached by improving the details of the experiment. The content of inositol in food was determined by using standard curve method according to transmittance (or absorbance). Results The linear range of inositol content in natural food and enriched food was 1-10 μg/mL using this method. The precision, repeatability and recovery of this method were fairly good. The sample test results were far less than the national food safety methodology standards of China. Conclusion Microbiological method is rapid, simple and has low limit of detection and high sensitivity, which is an effective and reliable method for determination of inositol in food. |
