      黄曲霉毒素是一类强致癌、致畸的真菌毒素, 在自然条件下产生, 广泛存在于花生、玉米及其粮油食品中, 严重危害人类的健康, 并造成了我国粮油产品出口贸易的巨大损失。传统的化学、物理黄曲霉毒素消减技术可能存在无法规模化应用、破坏营养成分和造成二次污染等缺点, 难以在粮油产品加工过程中应用。因此, 开展绿色、高效、稳定且大范围实用的新型黄曲霉毒素消减技术倍受广大研究学者关注。近年来, 随着纳米技术的发展, 通过表面改性、增大比表面积等手段设计和研制选择性吸附黄曲霉毒素的纳米材料成为了研究的热点; 作为粮油产品加工应用最广泛的技术, 光辐照技术在安全剂量、降解机制及对营养品质的影响等方面的研究取得了一定进展; 生物脱毒具有高选择性、无二次污染等特点, 其研究也受到了研究学者的青睐。本研究综述了近10年来国内外关于上述3个方面的黄曲霉毒素消减新技术, 并展望了今后发展方向。

      Aflatoxins are the kinds of highly carcinogenic and teratogenic substances produced in natural condition. Peanut, corn and cereal & oil agricultural products are susceptible to aflatoxins contamination, which bring a serious threat to human health and cause a great loss to China's cereal & oil agricultural products export trade. The traditional chemical and physical reduction technologies of aflatoxin have many disadvantages such as difficult to large-scale application, influencing the nutrient and leading to the secondary pollution. Therefore, most attentions have been paid to explore the green, efficient, stable and large-scale reduction technologies of aflatoxin. In recent years, design and development of nanomaterials with selective adsorption ability for aflatoxins removal via surface modification, larger surface specific area became the hot topic of research. And photo-irradiation technology was a most widely used technology in agricultural products processing, and well progresses were done in the study of safe dosage, degradation mechanism, influence on nutrient of food quality by photo-irradiation technology. Biological detoxification had caught the attention of many researchers because of its advantages such as highly selectivity, non-secondary-pollution and so on. This paper outlined the new reduction technologies of aflatoxins in the domestic and overseas, and predicted the direction of future development for aflatoxins reduction.
