白酒是中国特有的蒸馏酒, 但近年来, 假酒、劣酒引发的食品质量安全事件时有发生。为有效促进白酒质量的提升, 保障群众消费安全, 有必要对影响白酒质量的常规理化及感官指标、与白酒安全性相关的安全指标和与品质相关的风味指标进行检测, 气相色谱技术、高效液相色谱技术等常规检测技术虽然在白酒质量检测中有广泛的应用, 但其设备庞大、样品前处理复杂、结果分析相对较慢, 在食品监管人员现场执法对食品质量进行快速筛查中受到一定的局限, 因此, 快速检测技术发挥着重要作用, 也有着很大需求。本文综述了毛细管电泳技术、拉曼光谱技术、近红外光谱技术、电子鼻和电子舌快速检测技术在白酒质量检测中的应用现状。不断融入新技术, 不断增强方法研究, 进一步完善谱库, 多种仪器协同发展, 是未来快速检测技术在白酒质量检测中的发展方向。 |

Chinese liquor is a kind of Chinese-specific distilled spirits. But in recent years, food quality and safety incidents caused by fake wine and counterfeit wine have occurred. In order to promote the improvement of liquor quality effectively and protect the safety of groups, it is necessary to test the physical and chemical indexes, the safety indexes related to liquor safety and the quality indexes related to quality that affect the quality of liquor. Although conventional detection techniques such as gas chromatography and high performance liquid chromatography are widely used in liquor quality testing, it has been limited in the rapid screening of food quality by food regulators on the spot because of large equipments, complex sample preparation and relatively slow analysis of results. Rapid detection technologies in the current regulatory appear necessary particularly. The application status of rapid detection technologies in quality inspection of liquor were summarized, which included capillary electrophoresis, Raman spectroscopy, near infrared spectroscopy, electronic nose, and electronic tongue. Integrating new technologies constantly, enhancing methodological research constantly, improving the library further, and coordinating development of multiple instruments, are the development directions of rapid detection technology in liquor quality testing in the future. |
