      果蔬在贮藏和运输过程中都会受到不同程度的机械损伤, 从而引起果蔬腐烂变质。机械损伤是采后损耗的主要原因。研究采后果蔬损伤愈合机制, 采取科学有效的防控措施, 对减少采后果蔬损耗具有重要的意义。本文简要介绍了采后果蔬损伤愈合的形成机制, 主要综述了影响损伤愈合的因素, 以及采后果蔬损伤生理和品质的变化对损伤愈合的影响, 为保持果蔬的采后品质, 减少商用价值的损失提供参考。
英文摘要:
      Fruits and vegetables suffer various degrees of mechanical wound during storage and transportation, which lead to fruits and vegetables decay and deterioration. Mechanical wound is the main loss reasons of postharvest fruits and vegetables. It is of great significance to study the healing mechanism of postharvest fruits and vegetables and take scientific and effective prevention and control measures to reduce the loss of fruits and vegetables after harvest. This paper briefly introduced the forming mechanism of postharvest fruits and vegetables injury healing, mainly summarized the factors those affected damage healing, and the change of postharvest physiology and quality of fruit and vegetable damage effects on injury healing, in order to maintain the quality of fruits and vegetables after harvest and reduce the loss of commercial value.
