目的 建立食用植物油中3-氯丙醇酯(3-MCPD ester)的气相色谱-质谱联用法(gas chromatographymass spectrometry, GC-MS), 并对93 份深圳市售食用植物油中3-氯丙醇酯的含量进行调查。方法 称取0.1 g样品, 用1 mL 甲醇钠甲醇溶液(0.25 mol/L)将脂肪中的3-氯丙醇酯水解成3-氯丙醇(3-MCPD), 用硅藻土小柱净化后, 七氟丁酰基咪唑进行衍生处理, 用气相色谱-质谱联用法检测3-氯丙醇酯含量, 采用内标法定量。结果 3-氯丙醇酯在250~5000 μg/kg 范围内线性良好(r>0.999), 3 个浓度水平下加标回收率为78.5%~99.8%,相对标准偏差为2.5%~6.0%。93 份食用植物油样品中, 检出率28%, 3-氯丙醇酯含量为0~73.70 mg/kg。结论 深圳市成年人群食用植物油平均3-氯丙醇酯的摄入较为安全。 |

Objective To establish the method for determination of 3-chloro-1,2-propanediol ester (3-MCPD ester) in edible vegetable oils by gas chromatography-mass spectrometry (GC-MS), and investigate 3-MCPD ester residues in 93 vegetable oils from supermarket. Methods The 0.1 g sample was obtained, and 1 mL methanol
sodium methanol solution (0.25mol /L) was used to hydrolyze 3-MCPD ester into 3-chloropropanol (3-MCPD). After the purification of diatomite column, the derivative treatment was carried out with the fluorobutyl imidazole, and the content of 3-MCPD ester was detected by GC-MS, and the internal standard method was used for quantitation.Results 3-MCPD ester had a good linear relationship in the range of 250-5000 μg/kg, and the correlation coefficient was more than 0.999. The recoveries at 3 spiked levels were 78.5%-99.8%, with the relative standard deviations of 2.5%-6.0%. Among the 93 edible vegetable oil samples, the detection rate was 28%, and the content of 3-MCPD ester was 0~73.70 mg/kg. Conclusion The average consumption of 3-MCPD esters in edible vegetable oil of adult population in Shenzhen is safe. |
