      目的 通过分光光度法对不同种类食品中磷含量进行测定。方法 实验使用钒钼黄分光光度法进行方法确认, 然后对所选代表性食品进行磷含量测定。结果 经方法确认后, 本方法的标准曲线方程为Y=0.0345X+0.0021(r2=0.9999), 其线性范围: 0.0~15.0 μg/mL, 检出限: 3.49 mg/100 g, 灵敏度: 1.87%, 精密度:1.84%, 加标回收率: 96.96%~100.00%。所选的代表性食物中磷的含量为: 全脂奶粉>花生>牛奶>黄豆>婴儿米粉>鸡蛋>牛肉>鲫鱼>猪肉>鸡肉>羊肉>脱水胡萝卜丁>苏打饼干>面包>方便面>小麦粉>大米>玉米粉, 而且含磷较高的食品其脂肪含量都比较高, 含磷较低的都是一些低脂食品。结论 本研究测定不同食品中的磷含量, 为消费者构建更加健康的饮食结构和养成更加健康的饮食习惯提供参考。不同人群需要合理膳食, 正确控制磷的摄入量。
英文摘要:
      Objective To determinate the content of phosphorus in different kinds of foods by spectrophotometry. Method The samples were determined by vanadium molybdenum yellow spectrophotometry (V-Mo-Y) after the validation. Then the phosphorus content of selected representative foods were detected.Results The validation of V-Mo-Y showed that phosphorus content had a good linear relationship in the range of 0.0-15.0 g/mL, the standard curve was Y=0.0345X+0.0021 (r2=0.9999), limit of detection was 3.49 mg/100 g,sensitivity was 1.87%, precision was 1.84%, and recovery rate was 96.96%-100.00%. The decreasing order of phosphorus content in representative samples were as follows: whole milk powder, peanut, milk, soybean, nutrition rice flour for babies, egg, beef, crucian carp, pork, chicken, mutton, dehydrated carrot cubes, soda crackers, bread,instant noodles, wheatmeal, rice and corn flour. And those samples with higher phosphorus content were also in higher fat and lower ones in lower fat. Conclusion The determination of phosphorus content in different kinds of foods provides a reference for consumers to build a healthier diet structure and develop healthier eating habits.Different populations need a reasonable diet, and control the intake of phosphorus correctly.
