      β-内酰胺酶可降解乳及乳制品中的残留抗生素, 是国家严格监管的非法添加物质。通过添加β-内酰胺酶抑制剂可抑制β-内酰胺酶的活性, 干扰β-内酰胺酶阳性奶的检出, 非法添加行为严重威胁消费者身体健康, 降低了群众对乳品安全的信任度。本文综述了β-内酰胺酶抑制剂(克拉维酸、舒巴坦、他唑巴坦)的分类、性质及其检测方法的研究进展, 主要包括分光光度法、微生物法、高效液相色谱法、液相色谱串联质谱法、酶联免疫吸附法、生物传感器等方法, 并探讨这些方法在乳及乳制品中的应用及其优缺点, 为建立乳品中β-内酰胺酶抑制剂的标准检验方法提供理论和实验依据。
英文摘要:
      β-lactamase is strictly regulated as illegal additives because it can degrade residual antibiotics in milk and dairy products. β-lactamase inhibitors can inhibit the activity of β-lactamase, and interfere with the detection of β-lactamase positive milk. The illegal addition of β-lactamase severely threatens consumers' health and reduces public confidence in dairy safety. This paper reviewed the research progress of the classification, properties and detection methods of β-lactamase inhibitors (clavulanic acid, sulbactam, tazobactam), including spectroscopy photometric method, microbiological method, high performance liquid chromatography, liquid chromatography tandem mass spectrometry, enzyme-linked immunosorbent assay, biosensor and other methods, and discussed the application of these methods in milk and dairy products and their advantages and disadvantages, in order to provide theoretical and experimental basis for the establishment of standard test method for the determination of β-lactamase inhibitors in dairy products.
