      新鲜鱼因其味道鲜美且营养价值丰富, 深受人们喜爱。我国南北地域辽阔, 为了满足不同地方的消费者对新鲜水产品的需求, 长距离运输已经成为常态。鱼用麻醉剂能有效降低鱼类长途运输过程中的伤亡率, 已在某些国家渔业生产中广泛应用, 但其残留及安全性问题一直受到广泛关注。目前关于鱼用麻醉剂综合性研究的综述很少, 本文对几种常用麻醉剂进行了简单介绍, 对其前处理方法、检测方法、消除规律及安全性研究通过举例进行详细说明, 并探讨了渔用麻醉剂现在存在的问题和发展前景, 以期能为我国渔用麻醉剂的使用和管理提供参考。

      Fresh fish is popular because of its delicious taste and rich nutritional value. The north and south of our country are farther apart, so in order to meet the needs of consumers in different parts of fresh aquatic products, long-distance transportation has become the norm in China. The use of fish sedatives can effectively reduce the casualty rate of long-distance transportation of fish and has been widely used in some countries. However, its residual and safety problems have been widely concerned. At present, the comprehensive research on fish sedatives is very rare. In this paper, several commonly used sedatives were briefly introduced. This review briefly introduced several common sedatives and detailed illustrated pretreatment methods, detection methods, elimination rules and security research through examples. We also discussed the problems and prospects for fish sedatives, in order to provide some information for the management of fish sedatives.
