      驴奶的消费广度和知名度与牛奶相比都比较低。但驴奶营养成分丰富, 含有溶菌酶、多不饱和脂肪酸和矿物质元素硒等多种生物活性成分, 因而具有多种生物活性和丰富的有益健康功能, 例如低过敏性、抗菌活性、免疫调节活性和抗炎作用等。本文分析和讨论了驴奶中的化学成分的种类和含量, 并总结了近几年关于驴奶功效的研究进展, 以期能够为驴奶将来的研究方向和内容提供科学依据。
英文摘要:
      Donkey milk is less widely known and consumed than cow’s milk, but is a highly nutritious dairy product. It contains a wide variety of bioactive constituents, such as lysozyme, unsaturated fatty acid and mineral element of selenium, that possess diverse biological activities and impart a number of beneficial health functions, including low allergenicity and antibacterial, immunoregulatory, and anti-inflammatory effects. This review analyzed and discussed the chemical composition and bioactive constituents of donkey milk, and summarized the beneficial health properties of donkey milk in recent years, with a view to providing a firm basis for future research.
