玉米作为重要的粮食作物, 对人们的生活影响越来越大, 对玉米的精深加工综合利用及其营养价值的开发也越来越得到人们的关注。本文重点介绍了玉米的营养成分含量及缺陷, 玉米淀粉加工副产物蛋白粉的应用状况及国内外对玉米蛋白的研究开发, 玉米生物活性肽的生产工艺流程、活性肽的性能及应用。用玉米蛋白粉开发高附加值产品玉米生物活性肽是当前玉米淀粉加工企业转型优化升级重要的出路之一, 对提升行业经济效益促进科技进步有重要意义。 |

As an important food crop, corn has more and more influence on people's life, and the development of comprehensive utilization of corn and its nutritive value is getting more and more attention. This paper introduced the nutrition content and defect of maize, the application status of corn starch processed by-product protein powder, the research and development of corn protein, and the production process, properties and application of bioactive peptides. Using corn protein powder to develop high value-added corn bioactive peptide is one of the important ways to optimize the transformation and upgrading of corn starch processing enterprises. It has great significance to promote the economic benefit of the industry to promote scientific and technological progress. |
