      代谢组学是一种基于高通量检测技术的大数据分析方法, 广泛应用于药物研究、临床诊断、环境保护和植物育种等工作中。随着食品安全形势的不断变化发展, 人们对食品质量的要求不断提高, 在常规的符合性检验出现局限性的情况下, 代谢组学技术显示出了巨大应用潜力, 在食源性致病菌的检测、食品掺假及品质鉴别、食品产地溯源以及转基因食品安全等方面得到了广泛应用。组学技术具有高通量、高准确性、全景分析、技术灵活等特点, 可以作为现行食品安全评价标准的有力补充, 也为食品安全风险监测中疑难问题提供了新的思路和技术手段。本文主要介绍了代谢组学的概念、分类、研究平台和统计方法。重点阐述了代谢组学技术在食品安全风险监控中的应用, 为后续相关领域内的进展情况及发展趋势提供参考。
英文摘要:
      Metabonomics is a big-data analysis method based on high throughput detection technologies. The application area of metabolomics includes pharmacy research, clinical diagnosis, environment protection and plant breeding. With the changing of food safety situation, the requirement to food quality increases constantly. Metabonomics reveals huge application potential in related filed, while the common conformity test runs into limitation. It has been wildly applied in confirmation of food-borne pathogenic bacteria, food adulteration, quality identification, origin traceability and safety evaluate of trans-genomic food. Metabonomics is high throughput, high accuracy, full-array analysis and flexible technology, which can be a powerful supplement to modern food safety evaluation standard, meanwhile, provide a new idea and technique method to solve the difficulties in food safety risk monitoring. This article introduced the concept, classify, research technologies and statistical analysis methods of metabonomics. It was focused on the applications of metabolomics in food safety risk monitoring, which could provide necessary reference about evolve progress and tendency in related field to the later research.
