      目的 建立直接滴定法测定葡萄酒中还原糖含量的分析方法并研究其影响因素。方法 选择钨酸钠-硫酸锌-亚铁氰化钾体系沉淀剂, 消除葡萄酒中色素对还原糖测定的干扰。利用研制的无氧滴定装置, 直接滴定法测定葡萄酒中还原糖的含量。结果 3种进口葡萄酒3水平加标平均回收率为96.5%~102.2%, 相对标准差为0.58%~4.02%, 方法检出限达到0.1 mg/mL。结论 本方法能够快速、准确地测定葡萄酒中还原糖的含量, 解决了葡萄酒中低含量还原糖测定时, 滴定终点难判定和操作复杂的问题。
英文摘要:
      Objective To establish a direct titration method for determination of reducing sugar in wine and investigate its influencing factors. Methods Through the selection of sodium tungstate-zinc sulfate-potassium ferrocyanide precipitating agent, the interference of pigments in wine to reducing sugar was eliminated. The reducing sugar in wine was determined by direct titration using anaerobic titration apparatus. Results The average recoveries of 3 kinds of imported wine at 3 spiked levels were 96.5%~102.2%, and the relative standard deviations were 0.58%~4.02%. The detection limit of this method was 0.1 mg/mL. Conclusion This method is rapid and accurate, which can be helpful for the determination of reducing sugar in wine. It solves the problems that it is difficult to determine the end point of titration and complex operation in determination of low reducing sugar content.
