中国白酒与白兰地、威士忌、朗姆酒、伏特加、杜松子酒并称为世界6大蒸馏酒, 其生产工艺比其他的蒸馏酒都要复杂。从2003年开始, 我国对多数食品生产企业实施生产许可。通过政府制定的白酒技术规则和措施, 影响白酒企业的技术效率, 从而保障白酒生产安全。本文从我国白酒的生产许可要求以及生产过程中存在的常见问题出发, 探讨白酒生产企业在食品安全管理上需要努力的方向, 为食品生产现场核查人员及白酒生产企业提供技术参考。 |

Chinese liquor and brandy, whiskey, rum, vodka, gin are called the world's six largest distilled spirits, and the production process of Chinese liquor is more complex than other distilled spirits. Since 2003, China has implemented the production license for most food manufacturers. Through the technical rules and measures formulated by the government, the technical efficiency of liquor enterprises is affected to ensure the safety of liquor production. According to the problems of common Chinese liquor production license requirements and production process, the direction of liquor production enterprises in food safety management was discussed, in order to provide technical references for food production on-site inspectors and liquor producers. |
