海参是上等的补品良药, 作为功能性食品受到人们的喜爱。近些年, 随着保健品行业的迅速发展, 以海参为主要原料的保健品也越来越多, 同时, 对其药用价值及保健功能的研究也更加深入。海参含有多种重要的化学成分, 主要包括海参多糖、海参皂苷、海参胶原蛋白、海参多肽及脂类物质等, 这些活性成分具有抗肿瘤、抗氧化、免疫调节、抗菌、抗病毒、降血糖及抗凝血等生物活性, 可用于预防及辅助治疗某些疾病。本文综述了海参中重要的化学成分及其生物活性的研究进展, 为海参功能性食品的研发提供参考。 |

Sea cucumber has been a fine tonic medicine since ancient times, and as a functional food, it is always loved by people. In recent years, with the rapid development of health care industry, there are more and more health care products taking sea cucumber as the principal raw material, and more in-depth studies on medical value and healthcare functions of sea cucumber are carried out. Sea cucumber contains a variety of important chemical components, such as sea cucumber polysaccharides, saponins, collagen, peptides, lipids and so on. These components have some biological activities, such as anti-tumor, antioxidant, immunoregulatory, antibacterial, antiviral and hypoglycemic, which can be used to prevent and assist on treating certain diseases. This paper reviewed research progress on sea cucumber’s important chemical components and their bioactivities, which will provide references for the further research and development of sea cucumber’s functional food. |
