      目的 对重庆市水发蹄筋进行质量评价。方法 采用滴定法、比色法、高效液相色谱法、原子吸收法、原子荧光法测定水发蹄筋的pH、过氧化氢、挥发性盐基氮、生物胺及有害元素的理化指标。结果 31份样品的pH值范围为6.77~10.86; 均未检测出过氧化氢; TVB-N值范围为0~15.05 mg/100 g, 合格率为96.8%; 生物胺主要为腐胺和尸胺, 腐胺含量为1.23~35.28 mg/kg, 尸胺含量为0.55~1.71 mg/kg, 腐胺与TVB-N值的变化存在很好的正相关; 总砷、无机砷、铅含量范围分别是0~2.05、0~0.23、0~0.11 mg/kg, 合格率分别为67.7%、51.6%和100.0%; 镉和总汞均未检出。结论 重庆地区销售的水发蹄筋总体质量较好, 但有必要对pH偏高、总砷、无机砷含量问题予以重视。

      Objective To evaluate the quality of waterishlogged tendon in Chongqing. Methods The physicochemical indexs of waterishlogged tendon samples were detected by titration, colorimetry, high performance liquid chromatography and atomic absorption spectrometry which included pH value, hydrogen peroxide, total volatile basic nitrogen, biogenic amines and harmful elements. Results The pH value range of 31 samples was 6.77~10.86 and the hydrogen peroxide could not be tested. The TVB-N value ranged from 0 to 15.05 mg/100 g and the qualified rate was 96.8%. The mainly biogenic amines in samples were putrescine and cadaverine, and the content of them was 1.23~35.28 mg/kg and 0.55~1.71 mg/kg, respectively. There was a good positive correlation between putrescine and TVB-N value changes. The content of total arsenic, inorganic arsenic and lead was 0.01~2.05, 0.01~0.23 and 0.005~0.11 mg/kg, and the qualified rates were 67.7%, 51.6% and 100.0%. Cadmium and total mercury were not detected. Conclusion The overall quality of waterishlogged tendons sold in Chongqing area is better, but it is necessary to attach great importance to high pH value, the content of total arsenic and inorganic arsenic.
