      目的 建立婴幼儿米粉中13种脂类降解产物的顶空-气相色谱-质谱测定方法。方法 样品经水溶解分散后, 选择顶空平衡温度和时间分别为80 ℃和25 min, 经DB-624毛细管色谱柱分离, 采用气相色谱-质谱仪进行分析, 以保留时间对化合物离子定性, 以内标法定量。结果 13种目标化合物在浓度范围2.0~2000 μg内线性关系良好, 相关系数(r2)均大于0.999。13种脂类降解产物平均加标回收率为82.4%~114.7%, 相对标准偏差在3.65%~8.66%之间。方法的检出限为0.001~0.10 mg/kg。结论 该方法准确灵敏、简单快速, 可适用于婴幼儿米粉中脂类降解产物的检测。

      Objective To establish a method for the determination of 13 kinds of lipid degradation products in infant rice flour by headspace-gas chromatography-mass spectrometry (HS-GC-MS). Methods Samples were dissolved and dispersed with water, and pretreated by headspace equilibration at 80 ℃ for 25 min for equilibrium, separated with DB-624 capillary column, and then detected by GC-MS. The qualitative and quantitative analysis of compounds were conducted by retention time and the internal standard method, respectively. Results Thirteen kinds of target compounds had good linear relationships in the range of 2.0~2000 μg/kg with correlation coefficients (r2) greater than 0.999. The average recoveries of 13 kinds of lipid degradation products were between 82.4% and 114.7%, and the relative standard deviations (RSDs) were between 3.65% and 8.66%. The limits of detections (LODs) were 0.001~0.10 mg/kg. Conclusion The method is accurate, sensitive, simple and rapid, which can be used for the determination of lipid degradation products in infant rice flour.
