      目的 建立高效液相色谱法同时测定肉制品中胭脂红、诱惑红和赤藓红的分析方法。 方法 样品经石油醚除脂、酸性水洗脱、乙醇氨解吸后, 采用Waters Xbridge C18(150 mm×4.6 mm, 5 μm)色谱柱进行分离, 甲醇、0.02 mol/L乙酸铵水溶液为流动相进行梯度洗脱, 二极管阵列检测器254 nm波长检测, 外标法定量。结果 胭脂红、诱惑红、赤藓红可以有效分离, 线性范围均为5~50 μg/mL, 相关系数均大于0.999, 加标回收率为92.82%~96.46%, 相对标准偏差为0.97%~3.86%。结论 此方法操作简单、快速, 适用于肉制品中色素的测定。
英文摘要:
      Objective To establish a simple and rapid method for the simultaneous determination of carmine, allura red and erythrosine in meat product by high performance liquid chromatography. Methods Using petroleum ether to remove fats, samples were eluted by acidity water and then the pigments were released by ethanol-ammonia. The separation was achieved with Waters Xbridge C18 column (150 mm×4.6 mm, 5 μm)by using methanol and 0.02 mol/L NH4Ac as mobile phase with the gradient elution. Samples were detected by a diode array detector at 254 nm. The quantification was performed by the external standard method. Results Carmine, allura red and erythrosine were separated efficiently. All of the linear ranges were 5~50 μg/mL and the correlation coefficients were above 0.999. The recoveries of spiked samples were in the range of 92.82%~96.46% and the standard deviations were between 0.97%~3.86%. Conclusion This method is accurate and fast, and efficient for the determination of carmine, allura red and erythrosine in meat product.
