      目的 研究汾酒在贮存过程中酒体的陈酿行为。方法 采用气相色谱内标法测定不同贮存时间酒样的主体香气成分含量; 对其中存在化学平衡关系的香气成分进行量比关系的分析; 测定酒样的pH值和电导率; 利用多元线性回归建立模型, 偏最小二乘法对模型的稳定性进行检验。结果 建立了能反映汾酒陈酿行为与贮存时间的相关模型, Y=?5.096+3.196X1+4.815X2+1.801X3?0.1X4+0.124X5。多元线性回归与偏最小二乘法建模相关系数分别为0.998和0.994, 标准偏差分别为0.573和0.732。结论 所建模型稳定性良好, 物理意义明确, 表现出“酯化水解, 溶解氧氧化, 醇醛缩合, 低沸点物质挥发, 金属离子参与”是汾酒的主要陈酿行为。
英文摘要:
      Objective To study the Fen liquor aging behaviors during storage time. Methods The content of Fen liquor main aroma components of different storage time was analyzed by gas chromatography internal standard method. Part of chemical equilibrium relations among aroma compositions were analyzed in quantity ratio relationship and the pH values and conductivities were measured. The model was established by multiple linear regression and its stability was tested by partial least square. Results A model of Fen liquor aging behaviors and storage time was established, Y=-5.096+3.196X1+4.815X2+1.801X3-0.1X4+0.124X5. The correlation coefficients of multiple linear regression and partial least squares model were 0.998 and 0.994, and the standard deviations were 0.573 and 0.732. Conclusion The model had a good stability and specific physical meanings. It expressed that “esterification hydrolysis, dissolved oxygen oxidation, aldol condensation, low boiling point substances volatilization and metal ions participation” were the aging behaviors of Fen liquor.
