目的 提高餐饮业食品安全, 保障人们的身心健康, 加强餐饮业食品安全的治理。方法 通过调研、走访了解目前餐饮业食品安全现状及存在的问题。结果 餐饮业食品安全治理存在的五个方面的问题, 餐饮业自身特点、餐饮业食品安全成因复杂、食品安全检测检验体系不完善、餐饮业食品安全监管多主体、餐饮业食品安全自身管理薄弱。并提出了四个对策建议, 增强餐饮业自身食品安全的自律, 形成通力合作的监管模式, 完善食品安全的检测检验体系, 加大餐饮业违法分子的惩罚力度。结论 总结出的五大问题和四大对策有利于餐饮业食品安全问题的治理。 |

Objective In order to improve food safety in catering food system to ensure people's physical and mental health, and strengthen the management of cateringfood safety. Methods The current status and problems existing in the cateringfoodsystemwereunderstood by means of investigation and interviews. Results Five problems exist in catering foodindustry security governance, including:characteristics of restaurant industry, complex causes of restaurant industry food safety, imperfection of food safety testing, and inspection sys-tem, more subject of restaurant industry food safety supervision and weak management of restaurant industry food safety. Four countermeasures wereput forward to, which including strengtheningself-disciplinein food safety industry itself, forming the supervision model of cooperation, improving the food safety inspection system and intensifying catering foodindustry illegal molecular composition.Conclusion The five questions andfour countermeasures are helpfulto the catering industry for the management of food safety problems. |
