      目的 分析玉米须多酚成分及其抗氧化活性。方法 采用Folin-Ciocalteu法测定玉米须中总多酚含量, 利用HPLC法分析玉米须多酚成分; 采用抗氧化能力指数(ORAC)法测定玉米须多酚的抗氧化活性。结果 玉米须中总多酚含量为1.26 mg/g, 含有儿茶素、绿原酸、咖啡酸、阿魏酸、根皮苷、槲皮素等多种多酚类物质, 且具有一定的抗氧化活性, 其平均ORAC值为469.6 μmol TE/g。结论 玉米须富含具有抗氧化活性的多酚成分, 为玉米须进一步开发利用提供依据。
英文摘要:
      Objective To analyze the phenolics composition of corn silk and its antioxidant activity in vitro. Methods Folin-Ciocalteu method was used to evaluate the amounts of total phenolics of corn silk. Phenolics composition of corn silk was analyzed by HPLC and the antioxidant activity was evaluated by ORAC method. Results The amount of phenolics in corn silk was 1.26 mg GAE/g. HPLC analysis revealed that 6 phenolic acids (including catechinic acid, chlorogenic, caffeic acid, ferulic acid, phlorizin, and quercetin) were detected. Antioxidant activity assay showed that phenolics of corn silk had an effective antioxidant activity and the average ORAC value was 469.6 μmol TE/g. Conclusion Corn silk is rich in polyphenols with antioxidant activity.
