      香港《南华早报》事件以来, 反式脂肪酸越来越受到人们的关注。研究表明, 其过量摄入会引起婴儿发育过程中必需脂肪酸的缺乏, 并与成人心脏病及妇女II型糖尿病有一定的关联。本文就反式脂肪酸的膳食分布及来源、对人体的危害、国内外安全管理现状以及现行的具体检测方法, 包括红外吸收光谱法、银离子薄层色谱法、毛细管电泳法、气相色谱法、气相色谱质谱法等进行了综述; 并着重对气相色谱法以及气相色谱-质谱法中目标物提取、甲酯化衍生、色谱分离条件等进行了论述, 总结了常用的色谱柱固定相类型以及化合物的保留行为特点, 并对不同固定相的色谱柱分析各类食品基质中的反式脂肪酸进行了汇总, 最终对反式脂肪酸研究的当前热点及未来发展趋势进行了展望。

      Trans-fatty acids have aroused more and more attentions since reported by the South China Morning Post of Hong Kong. Studies have shown the association between the intake of trans-fatty acids and the risk of deficiency of essential fatty acids in infants, as well as heart disease and type II diabetes in women. In this review, the source of trans-fatty acids, its damage to human health, safety management of several countries and the detection methods, including infrared absorption spectrometry, Ag -thin layer chromatography, capillary electrophoresis, gas chromatography and gas chromatography-mass spectrometry, are presented. The gas chromatography and gas chromatography-mass spectrometry method, including the extraction of the target compound, methyl esterification, column conditions were discussed in detail; the retention behavior of columns with different kinds of stationary phase were summarized, and its application in different food matrixes are presented. Furthermore, the research focus and the trend of development of trans-fatty acids are also discussed.
