海蜇制品中胶原蛋白等营养成分含量丰富, 具有抗氧化、抗疲劳和增强免疫力等生理功能, 同时海蜇制品具有特殊的口感, 深受广大消费者的喜爱, 但是铝元素在海蜇等食品中广泛存在, 其并非人体所需元素, 铝摄入量超标会对中枢系统、生殖系统、骨骼和造血系统有潜在的慢性毒性,危害人体健康。本文综述了铝对人体健康的危害、海蜇制品中铝的检测方法、铝的去除方法, 并对海蜇制品中铝的研究进行了展望。 |

The content of nutrients in jellyfish products is rich such as collagen. Collagen has antioxidant and antifatigue, enhance immunity. Jellyfish products were favored by consumers because of its special taste. Aluminum widely exists in jellyfish products and other food, but it is not necessary for human. Aluminum will have the potential chronic toxicity of central nervous system, reproductive system, skeletal and he-matopoietic system when aluminum content in body exceeds the standard content. Aluminum will cause great harm to human health. The harm of aluminum on human health, detection method of aluminum, aluminum removal of jellyfish and the prospect of aluminum in the jellyfish products were discussed. |
