      目的 运用预测食品微生物学的方法研究不同温度下模拟菠菜感染金黄色葡萄球菌的生长规律, 选取了4 种模型( Gompertz模型、Logistic模型、Richards模型、Linear模型)进行拟合, 建立不同温度下的生长模型。方法 采用GB4789.10-2010第2 法, 测定不同温度下金黄色葡萄球菌在菠菜中的生长曲线, 并利用CurveExpert 1.3软件将曲线数据分别拟合Gompertz方程、Logistic方程、Richards方程和Linear方程, 确定最适方程, 建立一级模型和二级生长预测模型。结果 通过标准差和相关系数的比较, 得出10 ℃的最适生长模型为Linear模型, 15 ℃、20 ℃和25 ℃的最适生长模型为Gompertz模型, 再通过不同温度下最适生长模型得到菠菜中金黄色葡萄球菌的生长参数。结论 菠菜中金黄色葡萄球菌生长预测模型的建立为菠菜中金黄色葡萄球菌的风险管理部门提供监管依据, 也为菠菜制品的安全生产和流通提供了科学依据。
英文摘要:
      Objective The growth law of Staphylococcus aureus (S. aureus) in spinach at different temperatures were studied by using food predictive microbiology. Four models (Gompertz model, Logistic model, Richards model and Linear model) were selected to establish the growth predictive model at different temperatures. Methods The growth curve under different temperature of S. aureus in spinach were measured by using the second method of GB/T4789.10-2010, and the curve data were fitted to the Gompertz equation, Logistic equation, Richards equation and Linear equation by using the CurveExpert software. At the same time, the primary model and secondary growth prediction model were established. Results By comparing the standard deviation and correlation coefficient, the optimum growth model for 10 ℃ is Linear model and Gompertz model is proper for 15 ℃, 20 ℃ , 25 ℃. At last, the growth parameters of S. aureus in spinach can be obtained by the optimum growth model. Conclusion The growth prediction model of S. aureus in spinach was established to provide a basis of supervision for the risk management, and a scientific basis for safety production and circulation of spinach.
