      橙汁中普遍存在酵母菌, 其中部分对人体是无害的。但是近年来的研究发现, 一些酵母菌的存在不但会引起橙汁腐败, 还会导致人体感染患病。酵母菌是橙汁中最常见的条件致病菌之一,随着人们对橙汁饮用安全和人体健康潜在威胁的深入认识,条件致病酵母菌日趋受到重视。对致病酵母菌的研究也成为生命科学研究的热点。目前已知的橙汁酵母致病菌有14种: 近平滑假丝酵母(Candida parapsilosis)、星形假丝酵母(C.stellata)、热带假丝酵母(C. tropicalis)、无名假丝酵母(C. famata)、小丘假丝酵母(C. colliculosa)、涎沫假丝酵母(C. zeylanoides)、葡萄牙棒孢酵母(Clavispora lusitaniae)、新型隐球酵母(Cryptococcus neoformans)、汉逊德巴利酵母(Debaryomyces hansenii)、葡萄汁有孢汉逊酵母(Hanseniaspora uvarum)、东方伊萨酵母(Issatchenkia orientalis)、异常汉逊酵母(Pichia anomala)、粘质红酵母(Rhodotorula mucilaginosa)、阿萨希丝孢酵母(Trichosporon asahii)。本文对这些橙汁中条件致病酵母菌的种类、鉴定方法及其控制策略进行了系统地的综述与评述, 为橙汁生产、储藏、销售和消费提供参考。

英文摘要:

      Yeasts are ubiquitous in orange juice some of them are harmless to the human body. However, recent studies show that the existence of some yeast not only can result in spoilage of orange juice, but also can cause disease to human. Yeast is one of the most common pathogens in orange juice. Considering the drink security of orange juice and its potential threat to human body health, more attention is paid to the pathogenic yeast by the people. Therefore, research on pathogenic yeasts has become a hot topic in life science fields. Now 14 species of pathogen yeast in orange juice were reported those are Candida parapsilosis, C. stellata, C. tropicalis, C. famata, C. colliculosa, C. zeylanoides, Clavispora lusitaniae, Cryptococcus neoformans, Debaryomyces hansenii, Hanseniaspora uvarum, Issatchenkia orientalis, Pichia anomala, Rhodotorula mucilaginosa and Trichosporon asahii. The present paper reviewed the species, identification methods and control strategy of pathogenic yeasts which would provide useful reference for the production, storage, sale and consumption of orange juice.
