This paper briefly describes the basic idea of statistical process control(SPC) and HACCP,and elaborates theoretical basis of the combined application of SPC and HACCP.To illustrate it,we take the coliform bacteria control process in dehydrated garlic granules production for example,food producers can use SPC in production process to improve the control of the process and ensure the food safety. |
