      目的 针对食品接触用纸基复合材料开展非挥发性迁移物非靶向筛查与风险评估研究,为此类材料安全性研究与设计应用提供科学依据。方法 采用液相色谱-四级杆飞行时间质谱对纸/铝/塑和纸/塑两类典型食品接触用纸基复合材料在不同迁移条件下非挥发性物质的迁移情况进行全面筛查,基于迁移试验结果开展风险评估,并利用主成分分析(Principal Component Analysis, PCA)方法对比两类材料迁移物质差异。结果 两类纸基复合材料在酸性模拟物和含醇模拟物中共计筛查出包括施胶剂、抗氧剂、爽滑剂在内的38种非挥发性迁移物;经风险评估发现,纸/塑复合膜在95%乙醇中迁移出的5种烷基烯酮二聚体(Alkyl Ketene Dimer, AKD)施胶剂类物质存在潜在健康风险,建议开展更为精细的风险评估研究;PCA结果显示两种纸基复合材料在95%乙醇中迁移物组成存在可辨识的差异,纸/塑复合膜整体迁移出的物质种类和迁移量均高于纸/铝/塑复合膜。结论 综合迁移研究数据表明,纸/塑复合材质对纸基材中的风险物质阻隔性能低于纸/铝/塑复合材质。在包装高油脂或酒精类食品时,应关注AKD施胶剂类物质的迁移风险,建议可从优化施胶工艺、强化纸原材料质量筛选、调整/增设阻隔层厚度、限定使用范围等途径降低风险。

      Objective Non-targeted screening and risk assessment of non-volatile migrants from food-contact paper-based composite materials were conducted to provide a scientific basis for the safety evaluation, design and application of these materials. Methods Liquid chromatography coupled with quadrupole time-of-flight mass spectrometry was adopted to comprehensively screen the migration behaviors of non-volatile substances from two typical food-contact paper-based composites (paper/aluminum/plastic and paper/plastic) under different migration conditions. Risk assessment was performed to assess the safety risks of the detected migrants. Principal component analysis (PCA) was further applied to compare the differences in migration characteristics of chemical substances between the two types of materials. Results A total of 38 non-volatile migrants, including sizing agents, antioxidants and slip agents, were identified from the two materials in acidic food simulants and high alcohol-containing food simulants. Risk assessment results indicated that five alkyl ketene dimer (AKD) sizing agents migrating from paper/plastic composite films in 95% ethanol posed potential health risks, suggesting that further refined risk evaluation is required. PCA revealed distinguishable differences in the composition of migrants between the two paper-based composites under 95% ethanol migration conditions. The number and migration levels of migrants released from paper/plastic composite films were overall higher than those from paper/aluminum/plastic composites. Conclusion The comprehensive migration data demonstrated that the barrier performance of paper/plastic composites against hazardous substances in paper substrates is inferior to that of paper/aluminum/plastic composites. Special attention should be paid to the migration risk of AKD sizing agents when packaging high-fat or alcoholic foodstuffs. It is proposed that relevant risks can be reduced by optimizing the sizing process, strengthening the quality screening of raw paper materials, adjusting or increasing the thickness of the barrier layer and defining the application scope.
