      生腌醉蟹是我国传统即食生制水产品,其安全风险交织于养殖、加工、流通与消费全链条。“全健康”(One Health)理念强调人类、动物与环境健康的系统性关联,为审视此类复杂食品安全问题提供了整合性视角。当前,生腌醉蟹面临生物性危害(如副溶血性弧菌、寄生虫)、化学性危害(重金属、抗生素残留)及新兴污染物(微塑料、抗生素耐药基因)构成的复合型风险网络。水产养殖中抗生素滥用是耐药性产生与传播的关键驱动因素,而微塑料等环境介质可能加速耐药基因的水平转移。本文系统评述了全健康视角下生腌醉蟹从养殖环境到消费终端的全链条风险源,阐述了定量微生物风险评估(QMRA)与预测微生物学模型在风险量化中的应用,探讨了超高压、冷等离子体等非热加工技术与多重栅栏技术的协同增效潜力。未来需结合消费者风险感知行为及社会协同共治视角,构建涵盖生态环境源头治理、智慧化全程追溯与适应性分级监管的综合性长效治理框架,以保障传统生食水产品的安全与产业可持续发展。

      Raw marinated drunken crab is a traditional ready-to-eat raw aquatic product in China,and its safety risks are interwoven throughout the whole chain from aquaculture,processing,distribution to consumption.The“One Health”concept emphasizes the systematic interconnection of human,animal,and environmental health,providing an integrative perspective for examining such complex food safety issues.Currently,raw marinated drunken crab faces a complex risk network composed of biological hazards(e.g.,Vibrio parahaemolyticus,parasites),chemical hazards(heavy metals,antibiotic residues),and emerging pollutants(microplastics,antibiotic resistance genes).The abuse of antibiotics in aquaculture is a key driver for the emergence and dissemination of antimicrobial resistance,while environmental media such as microplastics may accelerate the horizontal transfer of antibiotic resistance genes.This paper systematically reviews the whole-chain risk sources of raw marinated drunken crab from aquaculture environment to consumer endpoint under the One Health perspective,elaborates on the application of quantitative microbial risk assessment(QMRA)and predictive microbiology models in risk quantification,and explores the synergistic potential of non-thermal processing technologies(e.g.,ultra-high pressure,cold plasma)combined with multiple hurdle technology.Future efforts should integrate consumer risk perception behavior and the perspective of social collaborative governance to construct a comprehensive long-term governance framework covering ecological environment source governance,intelligent full-process traceability,and adaptive hierarchical supervision,ensuring the safety and sustainable development of the traditional raw aquatic product industry.
