| 食品保鲜技术是保障食品安全、延长食品货架期、减少资源浪费的关键手段,其本质是通过先进技术抑制食源性致病菌的增殖, 减缓酶促反应与氧化劣变进程, 降低营养物质损耗, 从而保持食品固有的感官特性与品质。随着消费者健康意识的提升和“清洁标签”理念的普及, 天然保鲜技术因具有绿色天然、安全无毒、广谱抗菌等优势, 逐渐成为食品行业的研究热点与主流发展趋势。本文全面梳理了植物源、动物源、微生物源三类天然保鲜技术的应用瓶颈和作用原理, 及其在果蔬、肉制品、水产品、乳制品等领域的研究现状; 在此基础上, 重点阐述了以碳点(Carbon dots, CDs)为核心的新型保鲜技术, 及其推动天然保鲜与智能指示一体化发展的作用机制, 旨在为食品行业天然保鲜技术的研究及应用提供参考。 |

| Food preservation technology is a key means to ensure food safety, extend food shelf life, and reduce resource waste. Its essence is to use advanced technology to inhibit the proliferation of food-borne pathogenic bacteria, slow down the process of enzymatic reactions and oxidative deterioration, and reduce the loss of nutrients, thereby maintaining the inherent sensory characteristics and quality of food. With the improvement of consumers’ health awareness and the popularization of the “clean label” concept, natural preservation technology has gradually become a research hotspot and mainstream development trend in the food industry because of its advantages such as green, natural, safe and non-toxic and broad-spectrum antibacterial. This article comprehensively combs the application bottlenecks and working principles of three types of natural preservation technologies from plant sources, animal sources and microbial sources, as well as their research status in the fields of fruits and vegetables, meat products, aquatic products, dairy products, etc. On this basis, it focuses on the new preservation technology with carbon dots (CDs) as the core and its mechanism of promoting the integrated development of natural preservation and intelligent indication, aiming to provide reference for the research and application of natural preservation technology in the food industry. |
