| 目的 探究陕西省市售红薯淀粉及其制品植物源性成分与标识的符合情况,为监管部门制定防控策略提供数据支持。方法 从陕西省9个城市采集市售的红薯淀粉、红薯粉丝和粉条样品77份,采用实时荧光PCR法,对红薯、木薯、马铃薯、玉米源性成分进行定性检测,并对产品的标识一致性进行评价。结果 市售红薯淀粉及其制品中的红薯源性成分检出率为57.14%,有37.66%的样品检出了未标识的植物源性成分,以玉米和木薯源性成分为主。红薯淀粉的标识不一致问题主要是检出未标识的其他植物源性成分,而红薯粉丝和粉条则主要是未检出红薯源性成分。全部样品的标识一致性指数为38.96%,其中红薯淀粉的标识一致性指数为43.59%,红薯粉丝和粉条的为34.21%。结论 陕西省市售红薯淀粉及其制品植物源性成分标识与实际不符的问题较为突出,建议针对红薯淀粉和红薯淀粉制品中主要存在的不一致问题实施差异化抽检,以提升行业整体合规水平。 |

| Objective To investigate the compliance between the labeled and actual plant-derived ingredients in commercially available sweet potato starch and its products in Shaanxi Province, and to provide data support for regulatory authorities in formulating control strategies. Methods A total of 77 samples of sweet potato starch, sweet potato vermicelli and noodles were collected from nine cities in Shaanxi Province. Detection of sweet potato, cassava, potato, and corn-derived ingredients was performed using real-time fluorescent PCR, and the labeling consistency of the products was evaluated. Results The detection rate of sweet potato-derived ingredients in the commercially available sweet potato starch and its products was 57.14%. Unlabeled plant-derived ingredients were detected in 37.66% of the samples, primarily corn and cassava-derived components. The main labeling inconsistency in sweet potato starch was the detection of unlabeled other plant-derived ingredients, while for sweet potato vermicelli and noodles, it was mainly the non-detection of sweet potato-derived ingredients. The overall labeling consistency index for all samples was 38.96%. Specifically, the labeling consistency index was 43.59% for sweet potato starch and 34.21% for sweet potato vermicelli and noodles. Conclusions The discrepancy between the labeled and actual plant-derived ingredients in commercially available sweet potato starch and its products in Shaanxi Province is prominent. It is recommended to implement differentiated sampling inspections targeting the main inconsistencies found in sweet potato starch and its products to enhance the overall compliance level within the industry. |
