      随着消费者对天然、安全、健康食品需求的日益增长, 植物源功能活性成分作为合成添加剂的替代品受到广泛关注。本文在食品保鲜方面, 重点结合近年来多酚类、精油类及多糖类等典型活性物质的研究进展, 对其在抑制微生物生长及延缓氧化反应中的作用特点进行了归纳, 并结合纳米封装及活性包装等新型技术的发展, 分析其在肉制品、果蔬及水产品中的应用效果。在功能强化方面, 本文总结了植物源活性成分在功能性食品开发、生物利用度提升及清洁标签产品中的应用现状。基于毒理学研究、迁移行为检测及法规标准现状对相关安全性问题进行了梳理。在此基础上, 讨论了当前研究存在的应用稳定性不足、标准化程度有限等问题, 并对未来发展方向进行展望, 以期为植物源功能活性成分在食品领域的进一步应用提供参考。

      As consumers become increasingly demand for natural, safe and healthy foods, plant-derived bioactive ingredients attract wide attention as alternatives to synthetic additives. In food preservation, this paper focused on the research development of typical bioactive substances such as polyphenols, essential oils and polysaccharides in recent years, summarized their functional characteristics in antibacterial and antioxidantactivitie. It analyzed their application effects in meat, fruits, vegetables and aquatic products, combined with the development of new technologies such as nanoencapsulation and active packaging. In functional fortification, this paper summarized the application status of plant-derived bioactive ingredients in functional food development, bioavailability enhancement and clean label products. It analyzed the related safety issues based on toxicological research, migration behavior detection and current regulatory standards. On this basis, this paper discussed the existing problems in current research including inadequate application stability and limited standardization, prospects future development trends, and provides a reference for the further application of plant-derived functional bioactive ingredients in the food industry.
