      随着全球海产品供应和消费量逐年增加, 以次充好、掺假造假、标签错标等欺诈行为时有发生, 这不仅侵害消费者利益, 还可能带来食品安全问题。海产品物种鉴定逐渐成为人们关注的热点问题, 也是保障海产品质量安全、维护消费者利益的重要环节。DNA条形码技术作为一种生物分类学研究工具, 为海产品物种鉴定提供了有效的技术手段, 已在全世界范围内被广泛应用。本文主要介绍了DNA条形码技术的发展现状, 并综述了DNA条形码技术在鱼类、甲壳类等多种海产品物种鉴定中的应用研究进展, 尤其是与下一代测序(next-generation sequencing, NGS)、高分辨率溶解曲线分析(high resolution melting analysis, HRM)等最新技术手段的结合, 在深加工海产品等复杂样品的鉴定中有着广阔的应用前景, 为DNA条形码技术在海产品质量安全监管中的应用提供技术参考。
英文摘要:
      With the global supply and consumption of seafood increasing year by year, fraudulent behaviors such as passing off inferior products as quality ones, adulteration and mislabeling occur from time to time. This not only infringes on consumers’ interests but may also pose food safety risks. The species identification of seafood has gradually become a hot topic of concern and an important step in ensuring the safety of seafood and safeguarding consumers’ interests. DNA barcoding, as a tool for taxonomy, provides an effective technical means for the species identification of seafood and has been widely applied worldwide. This review mainly introduced the current development of DNA barcoding and summarized the research progress on the application in species identification of various seafood such as fish and crustaceans. Especially when combined with the latest technologies such as next-generation sequencing (NGS) and high resolution melting analysis (HRM), DNA barcoding has broad application prospects in the identification of complex samples like deep-processed seafood. This review will provide technical references for the application of DNA barcoding in the supervision of seafood safety.
