      油茶籽油富含多种生物活性成分, 其营养价值与健康功效受到消费者广泛认可。然而, 其活性成分的含量与组成受多种因素的影响, 加之市场价格较高, 掺假问题频繁, 制约了产业的高质量发展。本文系统梳理了油茶籽油中生育酚、角鲨烯、植物甾醇、多酚、茶皂素等主要活性成分的最新研究进展, 重点分析了品种与产地、预处理工艺、提取工艺、精炼工艺、贮藏方式等因素对其活性成分的影响。同时, 对油茶籽油掺伪形式及鉴别技术的相关研究进行了探讨, 并对未来的研究方向进行了展望, 以期为油茶籽油质量控制与真伪鉴别提供理论参考和技术支撑。

      Camellia oleifera seed oil is rich in various bioactive components, and its nutritional value and health efficacy are widely recognized by consumers. However, the content and composition of its active ingredients are influenced by many factors, and the high market price and frequent adulteration problems restrict the high-quality development of the industry. This paper systematically reviewed the latest research progress of main active components such as tocopherol, squalene, phytosterol, polyphenols and tea saponin in Camellia oleifera seed oil, and emphatically analyzed the effects of varieties and producing areas, pretreatment technology, extraction technology, refining technology and storage methods on its active components. At the same time, this paper discussed the related research on adulteration form and identification technology of Camellia oleifera seed oil, and prospected the future research direction in order to provide theoretical reference and technical support for quality control and authenticity identification of Camellia oleifera seed oil.
