      近年来, 白酒制造业正向机械化普及、自动化深化、智能化萌芽发展的新阶段, 这对白酒生产过程质量控制提出新的要求。然而, 传统检测方法存在检测周期长、成本高、操作复杂等问题, 难以满足现代白酒生产对快速、准确检测的需求。近红外光谱技术因其快速、无损、环保等优势, 已逐渐应用于白酒酿造的各个环节, 并在白酒生产过程质量控制中发挥着重要作用。本文系统梳理了近5年近红外光谱技术在白酒生产中的应用现状与发展趋势, 重点关注其在原辅料检测(如高粱、小麦)、发酵参数监控、成品质量检测、智能酿造在线检测中的应用。尽管近红外光谱技术在白酒行业展现出广阔前景, 但其在模型构建、数据库建设、标准化研究等方面仍面临一定挑战。未来, 持续不断的模型优化、数据库建设、人工智能融合及标准化体系的完善将是近红外技术在白酒行业应用的发展方向, 推动近红外光谱技术在白酒酿造智能化方面的进一步应用。

      In recent years, the Baijiu manufacturing sector is advancing toward a new stage characterized by the popularization of mechanization, the deepening of automation and the emergence of intelligent technologies. This has put forward new requirements for quality control in the Baijiu production process. However, traditional detection methods have problems such as long detection cycles, high costs and complex operations, making it difficult to meet the needs of modern Baijiu production for rapid and accurate detection. Near-infrared spectroscopy technology, with its advantages of rapidity, non-destructiveness and environmental friendliness, has been gradually applied to various links of Baijiu brewing and plays an important role in quality control during the Baijiu production process. This article systematically sorted out the application status and development trends of near-infrared spectroscopy technology in Baijiu production over the past 5 years, focusing on its applications in the detection of raw and auxiliary materials (such as sorghum and wheat), monitoring of fermentation parameters, quality detection of finished products and online detection for intelligent brewing. Although near-infrared spectroscopy technology shows broad prospects in the Baijiu industry, it still faces certain challenges in aspects such as model construction, database development and standardization research. In the future, continuous model optimization, database construction, integration with artificial intelligence, and improvement of the standardization system will be the development directions for the application of near-infrared spectroscopy technology in the Baijiu industry, which will promote the further application of near-infrared spectroscopy technology in the intelligentization of Baijiu brewing.
