| 目的 分析桉树蜂蜜中特征性成分及其抑菌效果。方法 本研究采用高效液相色谱-串联质谱法对桉树蜂蜜中特征性成分进行定性与定量分析, 并探究桉树蜂蜜对大肠杆菌及金黄色葡萄球菌抑菌活性。结果 在桉树蜂蜜中鉴定出7个特征性成分, 包括去氢吐叶醇、3-羰基紫罗兰醇、3’-甲氧基槲皮素、3’,4’,5’,5,7-五羟基黄酮、3’,5’,2,5,7-五羟基黄酮、木犀草素、N1-对香豆酰葡萄糖苷-N10-对甲氧基肉桂酰亚精胺, 其中, N1-对香豆酰葡萄糖苷-N10-对甲氧基肉桂酰亚精胺为首次在蜂蜜中报道; 定量结果显示, 去氢吐叶醇和3-羰基紫罗兰醇为主要成分。通过抑菌实验及最低抑菌浓度测定, 桉树蜂蜜在5.0 mg/mL质量浓度下对金黄色葡萄球菌表现抑菌作用, 在7.5 mg/mL质量浓度下对大肠杆菌具有抑制效果。结论 本研究对桉树蜜的植物性化合物成分进行了系统的定性定量, 并证明了桉树蜜具有良好的抑菌效果, 对金黄色葡萄球菌、大肠杆菌表现出较为优秀的抑菌活性, 该研究为桉树蜂蜜的真实性评价、品质控制及功能产品开发提供理论基础。 |

| Objective To analyze the characteristic components and antibacterial effects of Eucalyptus honey. Methods This study employed high performance liquid chromatography-tandem mass spectrometry for both qualitative and quantitative analysis of the characteristic components in Eucalyptus honey. Additionally, the antibacterial activity of Eucalyptus honey against Escherichia coli and Staphylococcus aureus were explored. Results The 7 compounds were identified in Eucalyptus honey, including dehydrovomifoliol, 3-oxo-α-lonol, 3’-methoxyquercetin, 3’,4’,5’,5,7-pentahydroxyflavone, 3’,5’,2,5,7-pentahydroxyflavone, luteolin and N1-p-coumaroylglucoside-N10-p- methoxycinnamoyl spermidine, among them, N1-p-coumaroylglucoside-N10-p-methoxycinnamoyl spermidine was reported for the first time in honey. The quantitative analysis results indicated that dehydrovomifoliol and 3-oxo-α-lonol were the main components. Through the antibacterial experiment and minimum inhibitory concentration determination, Eucalyptus honey exhibited antibacterial activity against Staphylococcus aureus at a concentration of 5.0 mg/mL and inhibitory effects against Escherichia coli at a concentration of 7.5 mg/mL. Conclusion This study conductes a systematic qualitative and quantitative analysis of the phytochemical compounds in Eucalyptus honey and demonstrates its favorable antimicrobial efficacy. Eucalyptus honey exhibites notable inhibitory activity against Staphylococcus aureus and Escherichia coli. The research provides a theoretical foundation for the authenticity assessment, quality control and functional product development of Eucalyptus honey. |
