      目的 探究不同干燥方式对牛大力品质的影响。方法 以牛大力为原料, 经真空微波干燥(vacuum microwave drying, VMD)、真空干燥(vacuum drying, VD)以及热风干燥(hot air drying, HAD)处理后制成粉末, 观察其微观结构, 测定其色差、总黄酮、总酚、多糖、淀粉的含量, 以及清除1,1-二苯基-2-苦基肼(1,1-diphenyl-2-picrylhydrazyl, DPPH)、2,2-联氮-双(3-乙基-苯并噻唑-6-磺酸)二铵盐[2,2’-azino-bis (3-ethylbenzothiazoline-6-sulfonate acid)diammonium salt, ABTS]阳离子自由基的能力。结果 VMD组的总黄酮(1.95±0.01) mg/g、总酚(18.14±0.18) mg/g、多糖(280.73±1.35) mg/g含量均最高, 且DPPH自由基清除率(54.17±0.09)%、ABTS阳离子自由基清除率(37.37±0.00)%均最优; VD组次之, HAD组最低, 三组间差异显著(P<0.05)。结论 VMD在保留牛大力总黄酮、总酚、多糖等成分及提升自由基清除能力上表现最优, 更适宜用于牛大力干燥。

      Objective To investigate the effects of different drying methods on Millettia speciosa Champ. quality. Methods Millettia speciosa Champ. samples were processed into powder using vacuum microwave drying (VMD), vacuum drying (VD) and hot-air drying (HAD). Their microstructures were observed, and color difference, total flavonoids, total phenolics, polysaccharides and starch content were measured. Additionally, their ability to scavenge 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2’-azino-bis (3-ethylbenzothiazoline-6-sulfonate acid) diammonium salt (ABTS) positive ion free radicals was assessed. Results The VMD group exhibited the highest levels of total flavonoids (1.95±0.01) mg/g, total phenols (18.14±0.18) mg/g and polysaccharides (280.73±1.35) mg/g. The radical scavenging rate of DPPH (54.17±0.09)% and the positive ion radical scavenging rate of ABTS (37.37±0.00)% were both the best. VD yielded the second-highest values, while HAD produced the lowest, with significant differences among all 3 groups (P<0.05). Conclusion VMD optimally preserves Millettia speciosa Champ. components, including total flavonoids, total phenolics and polysaccharides, while enhancing radical scavenging capacity, making it the most suitable drying method.
